When I became vegan, I thought, cool I’m healthy, no meat, no dairy, no eggs. But….. then I began to read more and more. I love to read any way, but this time it was not fiction it was about veganism, whole food plant-based diet and healthy food. It’s not just about eating healthy, but also the quality of your food and where its coming from and how it is processed.
So bread… According to Think and Eat Your Way Healthy, there were 30,000 variety of wheat seeds in ancient times and due to modern industry there are only handful of wheat seeds left. Todays seeds are a dwarf form of wheat seed that is then processed down so that it can last on store shelves for a month. True wheat bread would not last three days without being refrigerated. My question then became, what are they feeding us?! Now when purchasing gluten-free bread it can found in the bread aisle or the freezer section.
Well, I got to thinking that really, if we are to have natural healthy bread it would be in the refrigerated section of the market. It also makes me think we should not have a bread aisle, that the bread should be in the freezer section. The more I read and learned about food and quality and health, I am able to improve my food shopping skills, which in turn improves my cooking. So the next time you are at the market ask yourself “What aisle is my bread in?”
