Carbs have gotten a bad wrap in our society. I am here to have a mere discussion about carbs not to dissuade you or persuade you one way or the other. We tend to think that carbs makes us fat, but do they? Well that’s a question for you to ponder. T. Colin Campbell who promotes a whole foods plant-based diet states that 80% of our diet should be carbs. So my question is, is the carbs making us fat or is it the fattening stuff we put in with the carbs, like oils, salt, sugar, or fried foods.
Lets look at the variety of carbs that are out there, there are your common ones like potatoes, yams, sweet potatoes, rice, pasta, and bread. But what about other options like quinoa, couscous, fruit (yes fruit), oats, barley, or yogurt (dairy free). I’m sure there are others that come to mind. Despite what you may think about carbs they do give us energy, and you can’t burn many calories if you do not have the energy to move. With such a plethora of vegetables, fruits, and grains out there, there are plenty of combinations of dishes to make to avoid boredom. Whether you eat minimal carb or a boat load, have fun, try new ones, try different combinations with different vegetables and other ingredients.
